CHEF YONG

Born in South Korea, Chef Yong's appreciation of Japanese cuisine started at a young age. His passion drew him to Tokyo, Japan, where he began his 20-year journey in the craft of creating sushi. His learning travelled beyond masterful cutting techniques and sushi pressing. It encompassed the beauty of balance: the space between creativity and consistency, appearance and taste, heritage and innovation.

He continued to refine his art at Komeyui when he moved to Melbourne. He then served as Head Chef at Kisume before opening his restaurant SUSHI ON.
